Lunchin’ like a vegan gourmet today! Fancy pants pizza and vegan sushi.

Haven’t had cheese-less pizza in a long time: this was incroyable. :)

DIY Spinach Ice Cubes For Smoothies

Crazy easy, saves time, money AND replaces the need for ice cubes in your smoothies. Love this idea!

Homemade Protein Powder via BackToHerRoots

Directions: place ingredients in a coffee grinder a little at a time. Blend until powdered and store in an airtight container. 1 serving = 1/4 cup.

Ingredients

Basic Powder: 1 cup dried green lentils, 1/3 cup brown rice, 1/3 cup steel cut oats.

Cappuccino: For each 1/3 cup of lentil/rice/oats mixture you blend in the coffee grinder, throw in 1 tablespoon of whole coffee beans and blend until a fine powder. To sweeten, add desired amount of stevia or sugar.

Chocolate: For each 1/3 cup of lentil/rice/oats mixture you blend in the coffee grinder, throw in 1 tablespoon of unsweetened cocoa powder and blend until a fine powder. To sweeten, add desired amount of stevia or sugar.

Vanilla: For each 1/3 cup of lentil/rice/oats mixture you blend in the coffee grinder, add in the insides of 1/2 of a vanilla bean or slice a whole vanilla bean in half lengthwise and stash in a jar with the whole batch of protein powder to flavor continuously. To sweeten, add desired amount of stevia or sugar.

Pumpkin Spice: For each 1/3 cup of lentil/rice/oats mixture you blend in the coffee grinder, add in 1/4 teaspoon of ground ginger and ground cinnamon and 1/8 teaspoon of ground nutmeg and ground cloves. To sweeten, add desired amount of stevia or sugar.

Warm/Cold Zucchini Noodles With Pesto

Ingredients

Pesto

  • 1/2 cup walnuts
  • 1 tbsp hemp seeds *optional (sunflower seeds, sesame seeds and chia seeds are also good options).
  • 2 cups fresh basil
  • 3 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • 1 tsp sea salt

“Pasta”

  • 4 medium-sized zucchini or yellow summer squash
  • 3/4 cup grape tomatoes, sliced in half
  • 3/4 cup olives, pitted
  • 1/2 cup sun-dried tomatoes (not packed in oil), shredded

Directions

  1. For the pesto, add walnuts, seeds*, basil, garlic, olive oil and salt to a food processor or blender. Process until well combined.
  2. Cut ends off zucchini. You can use a spiralizer (like this one) to make the noodles, or a mandolin to slice the zucchini lengthwise and/or a knife. Try to keep slices thin.
  3. If cold: Toss zucchini pasta with remaining ingredients and pesto, to taste.
  4. If warm: Toss noodles very gently in a medium saucepan with 1 tbsp of olive oil for 2-4 minutes over medium heat. Add in pesto, and toss until heated. Serve.

Chocolate Coconut Butter Banana Bites

Ingredients:

  • 2 & 2/3 cup unsweetened shredded coconut (yield: 1 cup coconut butter)
  • 1/4 tsp kosher salt
  • 1-2 tsp pure extract (I used 2 tsp peppermint extract)
  • 2/3 cup sifted icing sugar (see note below)
  • 1/2 cup chocolate chips + 1/2 tsp oil (I used coconut), melted
  • Bananas, peeled and cut into 1 inch pieces

Chili Roasted Chickpeas = The Best. Ever.

You can’t go wrong with 4 ingredients. :)

4 cups cooked chickpeas

3 1/2 tablespoons olive oil or grape seed oil

5 teaspoons of chili powder

1 1/2 teaspoons of sea salt

* optional chives to garnish, lime for an extra kick!

Smoothies… Mmmmm…

Got a few smoothie questions about blenders and blades breaking due to ice. Unless you have an uber fancy blender, ice can be a killer on your blades (I burned out 3 blenders in my first year making smoothies).

If you like icy consistency but are blowing through blenders, aside from investing in a better one, there are a few tips that can help.

1. Freeze your fruit. Helps save moola & time, but also gives your smoothies that icy consistency without the cubes. (fruit is mostly water afterall).
2. If it’s a watery smoothie, just stick the cubes in there as is. Keeps it cold, and clinks in the glass (if u like things clinky. Fancypants).
3. (as pictured) Use frozen berries in the smoothie (no blending). Same effect as the cubes, but you can eat them with a spoon after. Fun stuff. :)

Above: This “dessert” smoothie was banana, mango, orange, blended with a smidge protein powder, chia seeds, a smidge greek yogurt and topped with frozen blueberries. Delish. :)

Apple Crunch Pie Apple Cups

Ingredients: (Makes two servings – 250 cal per serving)

(Pie filling/cup portion)

  • 2 gala apples
  • 1 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon (use less if you’re not a cinnamon lover)

(Crunchy crumb topping)

  • 2 tbsp flour
  • 1 tbsp butter, cut into pieces
  • 1-1/2 tbsp light brown sugar
  • 1 dash cinnamon
  • 2 tsp cream

Sick? Try A Cup Of Sweeeet Apple Ginger Green Tea.

Sweet Apple Ginger Green Tea

  • 3-4 small slices of fresh ginger
  • 1/2 an apple, sliced
  • Loose organic green tea (or a tea bag)
  • Honey - optional
  • Boiling water & a steeper

I sliced everything up, and steeped it for about 10 minutes. It’s delicious, warm, feels nice on the way down and hopefully (fingers crossed) will murder this BEAST of a cold.

Ginger is known for it’s anti-inflammatory properties, and it promotes general health & wellness. Green tea is loaded with anti-oxidants and honey is just as effective at treating sore throats as your favorite cough medicine.

If you don’t like apple, most other fruit will work (pineapple, pear, citrus).
