I LOVE this idea!
I’m kinda a nut for coffee, though I’ve severely lowered my intake this year (I like to be able to sleep and not type with shaky fingers). I’m not a ‘drink it black’ person, and to be perfectly honest I probably never will be. I admire those who can: I’m just not one of you.
One of the biggest changes to my diet has been reducing my sugar and dairy intake: I still consume both, but in limited quantities throughout my day. I’m not a fan of soy milk, but almond milk is a treat I enjoy often. However, in my coffee? Not so much.
This is Not a Diet - it’s your life. posted this AWESOME almond ‘cream’ recipe and I’m so excited to try it! I hate almond milk mostly because of how watery it makes my coffee. This seems to solve that issue.
By all accounts, the experiment was a success! Try her directions below.
Directions
1. Blanch 1 lb of almonds to remove the skins (I read they might make it bitter and I didn’t want to chance it) Put the almonds in a bowl and pour boiling water over them. Let stand for 1-2 minutes then dunk in cold water. Supposedly the skins will slip right off… most of them did. Some took a bit more coaxing.
2. Soak in enough water to cover + some for expansion for 8 hours.
3. Strain, place in food processor (or blender) with enough filtered or spring water to cover. (You can always add water but you can’t take it out, I was going for the creamiest milk I could make)
4. Process. It will become a frothy white mess.
5. Strain. I had to do this in two stages. first, I pressed it through a mesh strainer (push hard to squeeze the water out of the solids) then, I pressed it through a gold mesh coffee filter (very fine mesh. Could probably use cheese cloth) I saved the solids, and will use them in some kind of baking experiment.
That’s it! Put it in the fridge and let it “bloom” Shake well before adding to coffee, which is it’s intended purpose in my house. To make “milk” you just add more water until it’s the right consistency.
There you go! Admittedly, it’s a little more labor intensive than simply buying your Almond milk, but it is a pretty neat way to make it a little thicker for your morning coffee. :)
